Apple Spice Cookies with Caramel Glaze

Ingredients

For the Caramel Glaze:

  • 1 Cup of Brown Sugar
  • 1 Cup of White Sugar
  • 1/2 Cup of Water
  • 1/2 Cup of Heavy Cream
  • 1/4 Cup Light Corn Syrup
  • 2 Tbsp. Butter
  • 1 Tsp. Vanilla Extract
  • 1/8 Tsp. Salt

For the Cookies:

  • 2 3/4 Cup Flour
  • 1 1/2 Cup White Sugar
  • 1 Cup softened Butter
  • 1 Large Egg
  • 1 Tsp. Baking Soda
  • 1 Tsp. Vanilla Extract
  • 1 Tsp. Apple Pie Spice
  • 1/2 Tsp. Baking Powder
  • 1/4 Tsp. Cinnamon
  • 1/4 Tsp. Salt
  • 1/4 Cup Cinnamon Sugar (If you don’t have this on hand you can make it yourself. I take 1/4 Cup of White Sugar and add 1 Tbsp. Cinnamon and stir together until combined)

Directions

For the Caramel Glaze: (Start with the Glaze first, It will need to cool completely before you drizzle it over the cookies).

  1. In a heavy sauce pan over Medium-High heat add Brown Sugar, White Sugar, Corn Syrup and Water. Stir until all the sugar has dissolved (I use a wooden spoon for this). Boil untouched for 5 minutes.
  2. Remove the pot from the heat and add Butter, Heavy Cream, Vanilla Extract and Salt. Mix with a whisk until smooth.
  3. Return back to the stove, reduce heat to Medium and whisk for another 5 minutes.
  4. Remove from heat and set aside. It will thicken up as it cools

For the Cookies:

  1. Pre-Heat Oven to 375°
  2. For the Dry Mixture, combine together Flour, Baking Soda, Baking Powder, Apple Pie Spice and Cinnamon. (Reserve Cinnamon Sugar Combo for later)
  3. For the Wet Mixture, in a Separate Bowl Cream together Softened Butter and Sugar with a mixer until light and fluffy.
  4. Add Egg and Vanilla and mix again until combined.
  5. Take your dry mixture and add half to the wet mixture, blend with your mixer until fully incorporated, add the rest of the dry mixture and blend again
  6. Take your cookie dough and roll 1 Tbsp. worth into a ball and roll that ball into your Cinnamon Sugar Combo and place on an ungreased baking sheet.

They should look something like this

  1. Place in the Oven and cook for 10-12 minutes. Let cookies cool for 5 minutes before transferring to a cooling rack.
  2. After the cookies have completely cooled drizzle with Caramel Glaze and Enjoy!
